Mascarpone Cream with Summer Berries

Mascarpone cheese is well known amongst all tiramisu lovers, the amazing, rich taste of this cheese is impossible to forget. Well, I have some great news, I have another recipe with it.
1/2 lbs. mascarpone cheese
A cup of cold heavy cream
1 tsp. sugar
2 egg yolks
2 big tbs. honey (if you want it sweeter, put more)
about 1/2 lbs. fresh raspberries or strawberries (can be more)
Whisk the egg yolks with the honey, then add the mascarpone. Stir well. In a large, chilled metal bowl, whip the heavy cream and sugar to soft peaks with an electric hand mixer. When ready, carefully fold the whipped cream into the mascarpone mixture. You will have a silky, rich foam.
Put the cream into small glasses or bowls, put the fruits over it, and it is ready. Yes, that’s all.
When I made it first time, we ate it together with my husband. We really jumped on it, didn’t even talk until the last spoon. He always talks, so I was surprised 🙂
