Mascarpone Cream with Summer Berries

Mascarpone cheese is well known amongst all tiramisu lovers, the amazing, rich taste of this cheese is impossible to forget. Well, I have some great news, I have another recipe with it.
Ingredients:
1/2 lbs. mascarpone cheese
A cup of cold heavy cream
1 tsp. sugar
2 egg yolks
2 big tbs. honey (if you want it sweeter, put more)
about 1/2 lbs. fresh raspberries or strawberries (can be more)
Whisk the egg yolks with the honey, then add the mascarpone. Stir well. In a large, chilled metal bowl, whip the heavy cream and sugar to soft peaks with an electric hand mixer. When ready, carefully fold the whipped cream into the mascarpone mixture. You will have a silky, rich foam.
Put the cream into small glasses or bowls, put the fruits over it, and it is ready. Yes, that’s all.
When I made it first time, we ate it together with my husband. We really jumped on it, didn’t even talk until the last spoon. He always talks, so I was surprised 🙂

Chocochip oatmeal cookies

These delicious cookies are rich in fibers, what makes them a perfect choice for breakfast, or a long journey. The small pieces of semi sweet chocolate satisfy your sweet tooth.
Ingredients:

1 oz. brown sugar

1 oz. honey
1 egg
3.5 oz. semi sweet chocolate chips
5 oz. unsalted butter (room temperature)
5 oz. classic, regular oatmeal
3.5 oz. whole wheat spelt flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. grounded cinnamon
a pinch of salt
Whisk together the sugar, the honey, and the egg, then add the chocolate. Add the butter, stir again, and the rest of the ingredients. (Baking soda and baking powder must be mixed well with the flour).
Prepare a pan with baking sheets, and make small balls of the dough with a spoon or with your hand, about 1-1.5 inch diameter. Set them about 1 inch apart of each other.
Bake them on 370 F for about 10-15 minutes, until golden brown and  the odor of the cinnamon fills up your kitchen.
